"Hidden Healthy" Mango Smoothie
YUM. Matt and I have been making this smoothie ALL week long, thanks to my good friend (and genius whole foods blogger) Brenna, who made a similar drink for us on our way to the coast last Sunday! Here's how easy it is:
1. Put one handful of spinach, half an avocado, a cup of ice, three pitted dates, & about 1/2 cup coconut milk in the blender. Blend until smooth.
2. Blend in 1 banana, and a cup of mango chunks (fresh or frozen).
3. I like to add more ice to make a thicker smoothie, so adding about a handful more here gives me the texture I love!
Brenna told us that dates have 50% MORE potassium than bananas, which is something we often overlook in our diet. Potassium gives relief from blood pressure, can calm anxiety, and helps boost your metabolism. Not to mention, they act as a natural sweetener and thickener!
This smoothie is perfect for breakfast, but we also enjoy it with dinner! Smoothies like this that are packed with whole fruits and veggies that pack nutrients are great because it's like you're eating those things we NEED, without even knowing it.
For dinner last night I chopped up sweet potatoes and layered them in a glass pan, and drizzled over the top coconut oil, garlic, and oregano. Cooking at 400 degrees for 35 minutes made the potatoes soft on the inside and crispy on the top - so tasty. A simple side salad (my mom always makes this and it reminds me of summer!) of spinach, strawberries, avocado, and vinaigrette finished off a, easy and light meal. We finished feeling good about what we ate and very satisfied!
