5 Minute Banana Pancakes

We started making these pancakes a lot this past fall when Taya swapped from drinking a bottle every morning to eating breakfast with us. I like that they are filling & delicious of course, but also have a good amount of protein to them. We use the brand Birch Benders Plant Protein, and we buy at Whole Foods or on Amazon. One thing to note if it’s something that you keep an eye out for - is that they do have 5 g of added sugar, and also 10 g of protein. These specifically are also a vegan product so they’re made without any animal products as well. This is one of those mixes that you only need to add water to them, but we like to add a few things to make them even more tasty. You could honestly do this with any pancake mix this is just the one that we’ve sort of tact and ran with and have used lots of times.

When we make pancakes for Matt, myself & Taya, we typically make eight pancakes total which is one cup of mix and one cup of liquid. We like to swap out the water for oat milk, but just using water is still tasty, or you can use any other kind of milk substitute if you prefer. We also like to add one egg, one mashed banana, lots of cinnamon, a tiny bit of salt, and a splash of vanilla flavoring! We typically cook these on medium heat with a little bit of butter in the pan. I think the key is to flip the pancake when the bubbles start coming through the batter to the side that you can see, because this means the other side is cooked thoroughly. We sort of like our pancakes to be a little bit softer and not so browned. Especially when there’s mashed banana in them, they do stay sort of soft in the inside. This makes the pancakes really easy for Taya to eat because she can just take bites and chew them up really easily. Sometimes we add chia seeds to the batter if we want a little bit extra fiber and texture or are trying to make it a more filling meal for Tay!

our simple pancake“recipe”

+ Start by mashing one soft banana into a bowl
+ We like to make 8 pancakes total which is 1 cup of mix and 1 cup of liquid (we use oat milk)
+ Add both mix & liquid to bowl and stir
+ Add in one egg and stir
+ Pinch of salt + a few shakes of cinnamon
+ 1 Tbsp of vanilla extract
+ Mix all together - it will be a little lumpy from the bananas but shouldn’t have any dry spots
+ Non stick pan on Medium heat, add a little butter, and use the measuring scoop to scoop pancake mix on pan
+ Flip when bubbles appear on the pancakes / about one minute
+ Pancakes are done about a minute after they’re flipped

Top with a little bit of butter or your favorite syrup - or just eat alone, these are so delicious and I hope you enjoy!
