Red, White & Blue Chia Pudding

This is a super fun & festive 4th of July (or you could really eat it anytime) chia pudding snack. I love the combo of red white and blue, and it is a fun take on chia putting with a little bit of extra color. You could actually put any color you wanted into the chia seed mixture, you could use greens powder or a pomegranate powder to make it red, but of course we’re doing blue for Fourth of July. Here’s how you make this easy snack!

Start by adding 4 tablespoons of chia seeds into a mason jar, or any tupperware container or jar with a lid that seals tightly. Next you will add in one and a half cups of your milk of choice. I really like almond milk with no added sugar, the milk doesn’t seem to matter as long as you’re using a liquid. I wouldn’t recommend water as it tends to be too thin and doesn’t really add any flavor. I like to add a splash of vanilla extract and a dash of cinnamon as well. How you get the blue color is with half a teaspoon of blue spirulina powder. Mix all of this up with a fork so there’s no chunks of chia stuck to the bottom of the jar. Once the lid is sealed tight you can actually give it a really good shake to make sure all of those spirulina powder and chia seeds are mixed in with the milk. With this ratio, I find that the chia seeds will swell and the texture will become more pudding-like in just a couple of hours - but you can also make it the night before and leave it in the fridge over night. If you remember as you’re walking by the fridge in the next couple of hours.. just take the jar out of the fridge and give it a shake every once in a while. This helps the chia seeds to get mixed really well into the liquid and will create less chunks or clumping. It doesn’t matter if you’re eating chia putting in a couple of hours or the next day, you will wait to put toppings on until it is taken out of the fridge and you’re ready to eat it. I topped with sliced banana, sliced strawberries, blueberries and dried coconut flakes. This, was super delicious, and I love the added crunch the coconut flakes gave. You can really add anything to the top of it, any fruit or granola that sounds good. Super easy!

+ TBSP chia seeds
+ 1 1/2 cups almond milk
+ Splash of vanilla extract
+ Dash of cinnamon
+ 1/2 teaspoon blue spirulina powder
