Roasted Sweet Potato w/ Goat Cheese

This is the easiest little snack or appetizer to make, it just takes 30 minutes to roast the sweet potatoes and is really easy to prep as well. I love this for a quick lunch, you can roast other veggies of course, but even keeping it simple with just the sweet potato is so delicious. You could easily amp this up to make a cute appetizer dish, by putting the sweet potatoes in individual ceramics and adding the goat cheese and honey on top with a little spoon in each. You can garnish with Rosemary, I really like hot honey, or even feta cheese if you prefer it over goat cheese. how to prep + make

  1. Preheat your oven to 400°.

  2. Next get out a cookie sheet, ours is non-stick but I still like to add olive oil to the bottom of the pan.

  3. Peel two large sweet potato.

  4. Chop into bite-sized pieces; I typically cut in half, then cut into strips, and chop into little cubes almost from there.

  5. Spread them all out onto the pan as every as possible. Add a little bit more olive oil to the top, then sprinkle salt & pepper on top.

  6. You can add garlcic powder, fresh garlic, other veggies, red pepper flakes, rosemary, or any other spice you like at this step. I typically just keep it simple with salt and pepper.

  7. Cook in the oven at 400° for 30 minutes - but this is important: half way through cooking, take a spatula and mix the sweet potato on the tray so they all get evenly cotaed in olive oil & bake evenly.

  8. At the end you can turn your oven to broil at 400° for 5 minutes if you like them to have a little bit of crunch to the outside.

  9. Servc warm, in a bowl, coat with crumbled goat cheese and a little bit of hot honey.
